Instructions to make Chicken Kofta Curry:

  1. Firstly take the chicken mince in a grinding jar, add half chopped onion, chopped green chilli and grind it well. Romove it in a large bowl..
  2. Then to this chicken mixture, add remaining half chopped onion, ginger-garlic paste, salt, red chilli powder, coriander powder, cumin powder, garam masala powder, sugar, ghee, chopped coriander leaves, chopped mint leaves. Mix everything well. Now keep it for marination for half an hour in refrigerator..
  3. After half an hour make small balls and deep fry them until golden brown. 250 grams of chicken would make nearly 14 balls..keep the fried koftas aside..
  4. Now for curry, heat a pan add 1 tbsp ghee & 1 tbsp oil. Now add all the khada masalas, as mentioned above. Let them splutter, then add chopped onion. Let it fry for about a minute. Then add ginger-garlic paste, cook for about 2 mins. Then add tomato puree to it. Mix everything well & again fry the masalas for 2 to 3 mins..
  5. Then add all the dry masalas, coriander powder, salt, turmeric powder, red chilli powder, garam masala powder, sugar and mix everything well. Now fry the masalas on a low flame until oil starts releasing from the masalas..
  6. Then add a cup of water to it. When the water starts boiling, add the fried koftas to it. Mix it, now cover the pan & cook it on a low flame for about 15 mins. Add some chopped coriander leaves to it. Give it a mix. Now switch off the flame..
  7. Serve it hot with steamed rice or with chapatis..
