Instructions to make Anokhi biryani:
- Boil rice, add all the whole spices..
- Heat 1/2 cup oil add fried onion (keep some for later use) and tomatoes (keep some for later use).
- Add chicken and 1 tsp ginger garlic paste. Cook for 4-5 mins. Then add 2 tsp red chili powder..
- Add 2 tsp garam masala powder, 2 tsp salt and 1 cup yogurt. Mix everything really well..
- Cover and cook until chicken is tender, then add alo Bukhara and cook until oil comes on top(or water completely dries).
- Now layer the biryani. First layer is of rice then chicken with masala then rice..
- Then place the fried potatoes, fried capsicum, boiled chick peas, some tomatoes..
- Then a layer of rice, the remaining masala, and chopped mint and chopped fresh coriander. (you can put green chilies also if you want it more spicy).
- Add the remaining fried onion on top, some food color(I have used orange and yellow color) Cover and give it a dum for 10-15 minutes..
- Serve garma garam with raita And sprite ka tarka๐.
