The ingredients needed to make Plain Biryani Rice:

  1. {Take 11 /2 cup of Basmati or Jeerakasala rice.
  2. {Get 1 of big juicy tomato.
  3. {Take 2 inches of ginger.
  4. {Prepare 8-10 of garlic cloves.
  5. {Make ready 6-8 of green chillies.
  6. {Take As needed of Mint leaves.
  7. {Take as required of Chopped coriander leaves - handful.
  8. {Make ready 2 of medium sized onions - finely & vertically sliced.
  9. {Make ready as required of Saffron strands.
  10. {Get 3 tbsp of ghee.
  11. {Prepare as required of Water.
  12. {Get as per taste of Salt.
  13. {Make ready 1 pinch of turmeric powder.
  14. {Get as needed of Chicken or veg stock (optional).
  15. {Take As needed of Few raisens.
  16. {Take As required of Few cashew nuts.
  17. {Get of Whole spices:.
  18. {Take 1 of cinnamon stick.
  19. {Get 1 of star anise.
  20. {Make ready 3-4 of cloves.
  21. {Make ready 3 of cardamom pods.
  22. {Take 1 of Bay leaf.
  23. {Make ready 1 of mace.
  24. {Prepare 1/2 tsp of pepper corns.
  25. {Make ready 1/4 tsp of fennel seeds.

Instructions to make Plain Biryani Rice:

  1. Chop the ginger, garlic, green chillies & prepare a smooth paste. Chop the tomato finely and set aside. Prepare the birista by deep frying half of the onions in cooking oil until golden brown. Fry the cashewnuts & raisens in the same oil & set it aside..
  2. Wash the rice well in clean water, strain it and set it aside. Set a pressure cooker on medium flame. Add ghee followed by the whole spices. Add the mint leaves and then the onions. Saute well. When the onions turn translucent add in the ginger- garlic- green chilli paste and mix well until the raw smell is no longer there. Add in the tomatoes & saute well..
  3. When the tomato becomes mushy add in the rice and saute for 2 mins in low flame. Now add the coriander leaves, saffron strands and mix well. To enhance the flavours chicken or veg stock can be added but it is purely optional. Add in 2 3/4 cup of water and bring it to boil under high flame. Add a pinch of turmeric powder & salt as required. Close the lid and cook till one whistle. Immediately move the cooker to the lowest flame burner, simmer it to the lowest & cook for another 4 mins..
  4. Switch off the flame & set the cooker aside for the pressure to go down. Open the lid and add the birista & mix the rice gently with the spatula. Garnish with fried raisens & cashew nuts. Serve hot with any curry of your choice.
